It's getting to be subzero temperatures and what I crave is a hot pie. Since I've gone back to my supermarket shopping lifestyle, I've discovered a whole range of "vegetarian" substitutes, like this vegetarian brown sauce. The first thing to try with it: Shepherd's Pie! Delicious.
Recipe
Ingredients
1 cup vegetarian brown sauce (or you could simply use vegetable stock with cornstarch)
2 cups mixed vegetables (I used diced onions, carrots, corn and green beans)
1 cup boiled chickpeas (you can make it by simmering for about 2h)
4 small potatoes
4-5 tbsp soy milk
1 tbsp butter
1. Boil the potatoes in some salted water until soft and tender.
2. Heat up the brown sauce and add all the mixed veg and chickpeas. Simmer for 10-20 minutes until the sauce is thickened. Let cool, add a pinch of salt if you find it tasteless.
3. Using a fork, blend the potatoes into mush. Add soymilk and butter and mix until creamy.
4. In a dish, add the veggies. Then ladle mashed potato over it and press it down slightly.
5. Using a fork, run squiggly lines through the surface. Pop the dish into a broiler for 5 minutes or until the ridges are crispy and browned.
