Corn Pudding, Poudine mais


I learnt this from a cooking class organized at my school. It's typical Mauritian cooking, and the recipe is really simple. I don't think its too unfair to post it online, because there are similar ones available and it's no family secret or anything. Try making it, it takes about 20 minutes on the stove and 5h in the fridge before you tuck in.

First, you have to buy corn meal though. It's such a pretty golden color!




For each cup of corn meal, add 1.5 cups milk and 0.5 cups sugar. Heat in a pot until the whole mixture becomes this sticky, starchy cream. This should take about 15-20 minutes on a medium setting. Keep stirring so the mixture doesn't burn.


Put it in a pan, and sprinkle coconut over it. Bonus if its sweetened coconut! Chill the tray for about 4 hours, and serve cold.
